Southern Cornbread

This easy Southern Cornbread starts with Jiffy Corn Muffin Mix and a few simple ingredients to create a moist, tender cornbread with just a touch of sweetness. It's the perfect side for baked beans, chili, soups, barbecue, and just about any Southern meal.

Ingredients
  

  • 2 Boxes Jiffy Corn Muffin Mix
  • 1 1/4 Cups Buttermilk Regular Milk works just fine too
  • 1 Large Egg
  • 2 Tblsp Sugar
  • 2 Tblsp Melted Butter

Equipment

  • 1 Large mixing bowl
  • 1 Whisk
  • 1 Silicone Spatula
  • 1 8-inch Baking Pan Round or Square
  • 1 Measuring cups and spoons

Method
 

  1. Preheat oven to 425°F.
  2. Lightly grease an 8×8-inch baking pan.
  3. In a large bowl, combine the Jiffy Corn Muffin Mix, buttermilk, egg, sugar, and melted butter.
  4. Stir just until combined. Do not overmix.
  5. Pour batter into the prepared pan.
  6. Bake for 25 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  7. Allow to cool for a few minutes before slicing and serving.

Notes

  • Jiffy Corn Muffin Mix makes this recipe quick without sacrificing homemade flavor.
  • Buttermilk creates a softer, richer crumb, but regular milk works well too.
  • Don't overmix the batter—stir just until the dry ingredients are moistened.
  • Delicious served warm with butter, honey, or homemade jam.
