Shrimp Chowder with Herb Drop Biscuits

Cozy comfort food for your RV kitchen or home table.

If you’re craving something creamy, hearty, and packed with flavor, this Shrimp Chowder with Herb Drop Biscuits is a winner. The rich, savory chowder pairs perfectly with tender, herby biscuits baked right on top — no extra pans required. It’s an ideal one-dish meal for cooler evenings on the road, a campground potluck, or a special weekend dinner at home.

The best part? You can prep it in about 30 minutes, then let the oven work its magic while you relax.

Ingredients

For the Chowder:

  • 8 slices bacon, chopped
  • 1 bunch green onions, chopped
  • 8 garlic cloves, chopped
  • 10 Tbsp flour
  • 3 ½ cups chicken stock (low-salt recommended; we like “Better than Bouillon”)
  • 1 ⅓ cups heavy cream
  • 2 ½ cups frozen corn
  • 2 Tbsp fresh chopped dill or 1 Tbsp dried dill
  • 1 lb cooked, peeled, and deveined shrimp, chopped into bite-size pieces

For the Herb Drop Biscuits:

  • 2 cups Bisquick
  • 2 Tbsp fresh chopped parsley or 1 Tbsp dried parsley
  • 1 Tbsp fresh chopped dill or ½ Tbsp dried dill
  • 1 chopped green onion
  • ⅔ cup milk

Instructions

  1. Preheat oven to 425°F. Lightly grease a 13×9-inch baking pan.
  2. Cook bacon in a skillet until crisp. Remove bacon and reserve the drippings.
  3. Add green onions to the skillet and cook until tender, about 3 minutes.
  4. Sprinkle flour over the onions and mix well.
  5. Gradually whisk in the chicken stock and heavy cream.
  6. Bring to a boil, then reduce heat and simmer, stirring occasionally, until thickened (about 4–6 minutes).
  7. Stir in bacon, garlic, corn, dill, and shrimp. Remove from heat.
  8. Make the biscuits: In a medium bowl, combine Bisquick, parsley, dill, and green onion. Stir in milk until just moistened.
  9. Pour the chowder into the prepared baking dish. Drop biscuit dough by large spoonfuls (about 8) over the top.
  10. Bake 30–45 minutes, or until biscuits are golden brown.

Tips & Variations

  • RV-Friendly Prep: Cook the bacon and onions outside on a portable burner to keep your RV cool, then finish baking inside.
  • Seafood Swap: Try this with crab or scallops for a coastal twist.
  • Extra Veggies: Add diced carrots or celery with the green onions for more color and nutrition.
